I arrived at this recipe quite by accident. We have been eating a lot more vegetables this year and I attempt to include as many different types as possible in our meals. We wanted cole slaw for dinner so I started adding. The resulting color was so much fun, I had to share. Please note, all ingredients are approximate. If there's something you really don't like, just leave it out. But, if you leave out the beets, the color fun will not be there. It should still taste delicious though. Enjoy!
1/2 small beet, shredded
1 light colored carrot, shredded
1 piece jicama, shredded (about equal to the others)
2 large radishes, shredded
1/2 -1 cup purple cabbage, finely chopped
2 cups green cabbage, finely chopped
1-2 tbls rice wine vinegar
Salt and pepper to taste
1 tsp dijon mustard
1/2 cup mayonnaise
Shred and mix the vegetables. Add the remainder of the ingredients and stir well. Add more or less to adjust to your taste. This turns out a beautiful pink color and is quite delicious.
