Healthy Recipes

I have modified recipes for years to accommodate my own eating challenges. Like many people, I have a number of foods I cannot tolerate. Over the last year or so, I have slowly slipped back into eating many of those foods and suffered the consequences of this lapse of judgment. Effective the first of the year, I went “clean” and removed all of my food intolerances from my diet. At the same time, my mate and I decided it was time to make some changes to increase our overall health. The recipes here are all a result of these changes.

You will find these recipes to be free of:

  • Gluten (replaced by alternative meals/flours (ground nuts and seeds, called meal or rice flour)
  • Dairy (replaced by other milks, I generally use nut milk). The exception is ghee which my body seems to tolerate.
  • Nightshade family foods (tomatoes, potatoes, peppers, eggplant, etc.) (there are no real substitutes for these in foods, though I have found by adding a bit of lemon juice to recipes I used to use tomatoes in, I can get close to the old food in flavor)/li>
  • Coconut (I know people say its the bomb these days but I can't eat it in any form)

I have found making substitutions is fairly easy once you get used to it. If you have a different food you cannot eat, do some searching on the web to find good substitutes. Then just modify the recipe accordingly. The first time it may not be perfect and it will not likely ever taste exactly like the food you used to eat, but if you are like me, you will still appreciate the modified versions.
